Protein
Test Description
Honey contains pollen grains and bee-derived proteins such as enzymes, structural and immune proteins. The amounts and proportions of these components depend on the botanical and geographical origin of honey. Despite the low content of honey protein, protein testing is becoming a popular measure, and is being used more frequently as a marker of honey authenticity and quality.
